~ These are savory muffins which are the
perfect kid snack, breakfast, or lunch. The
main part is the batter. Once you complete the batter, you can make it using
just about anything you have in the refrigerator. A popular version is pepperoni and Parmesan. One
of my son’s favorite combinations, is broccoli and sharp cheddar. A close
friend preferred honey ham and cheddar and mozzarella. If you choose to omit
cheese, you will need to add extra seasonings and salt. I prefer a strongly
flavored cheese with a few mild cheeses to help keep the muffins moist. This
recipe will yield 12 muffins. I keep extras in the refrigerator for a quick
breakfast to go for my little ones. Approximately 20 seconds in the microwave
is all you need.
