Special Equipment:
Electric mixer
Mixing bowl
Medium bowl
8 x 8 baking pan
Parchment paper
Ingredients:
1 stick unsalted sweet butter
¼ cup brown sugar
½ cup granulated sugar
1 large egg
1 ½ tsp vanilla extract
1 1/3 cup all purpose flour
¾ cup graham cracker crumbs
1 tsp baking powder
¼ tsp kosher salt
10oz bittersweet chocolate
chips
7oz jar of marshmallow
fluff
Instructions:
- Preheat oven to 350 degrees.
- In medium bowl, with a spoon thoroughly blend flour, cracker crumbs, baking powder, and salt.
- In the mixing bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in egg and vanilla.
- Slowly add flour/cracker mixture slowly into mixing bowl and blend thoroughly.
- Line baking pan with parchment paper, making sure to leave paper over sides of pan.
- Use about half dough mixture and press onto bottom of pan.
- Spread chocolate chips evenly onto of dough and very lightly press into dough.
- Spoon marshmallow fluff bit by bit and spread evenly as possible on top of chocolate.
- Measure out parchment paper roughly the length of size of pan.
- Take remaining dough mixture and roll out onto parchment paper to cover as much surface area as possible. Don’t worry of if it seems like there’s not quite enough dough.
- Carefully flip dough onto surface of marshmallow fluff. If any dough falls, just flatten against palm of your hand and lay onto any uncovered surface.
- Bake for 30-35min or until lightly browned.
- Remove pie and cool completely before cutting.
