Special Equipment:
wok
Ingredients:
4 slices thick cut
bacon- diced
1/3 can of Spam-
diced
4 large eggs- beaten
5 cups cooked rice- thoroughly
cooled
2 tbsp light soy
sauce
1 tsp salt
½ tsp sugar
Vegetable oil
Directions:
- Heat wok on medium high heat. Add spam and toss until lightly browned. Remove from wok and set aside.
- Lower to medium heat and add bacon. Cook until the edges begin to crisp. Remove bacon and add to cooked spam. Pour out bacon grease into a separate small bowl.
- Add rice to wok; spread rice across wok to cover surface area. Let the rice toast for about 1-2min. Sprinkle salt and sugar evenly across rice. Toss rice and mix.
- Add soy sauce and toss until all of rice is colored. Taste and add more salt if desired.
- Add spam and bacon. Mix evenly.
- Move rice to outer edges of wok and create about an empty space in the middle of the wok (about 4” in diameter).
- Drizzle about 1 tsp of oil in the middle and add eggs immediately. Let eggs heat up- once the eggs begin to cook, scramble together while keeping eggs within the space.
- Once eggs are almost completely cooked, mix thoroughly into rice.
- Serve immediately.
