Butter Mochi

~The best recipes are often the ones passed on from someone else who also loves food. I take no credit for this recipe, but it'd be a crime not share this with the world. Whenever this friend brings her fabulous butter mochi to our potluck dinners, I have to try very hard not to hide the platter. And I don't even like desserts! 



Ingredients:
16 oz Blue Star Mochiko flour
2 ½ cups sugar
2 tsp baking powder
12 oz can evaporated milk
14 oz can Natural Value Organic Coconut Milk coconut milk
3 eggs
2 tsp pure vanilla extract
1 stick butter, melted and cooled



Directions: 
  1. Preheat oven to 375 degrees.  Grease a 13x9x2 pan with butter. 
  2. In a large bowl, sift flour, sugar, and baking powder and mix well. 
  3. In a medium bowl, combine evaporated milk, coconut milk, eggs, and vanilla. Mix well. 
  4. Add dry ingredients and blend together.  Stir in melted butter. 
  5. Pour into greased pan and tap bottom of pan on a hard surface to settle batter.  Bake for 50-60 minutes or until golden brown. 
  6. Cool at least 1 hour before cutting and enjoying.  Cut with plastic knife.  Serve.
