Jalapeno Soy Baked Salmon

~A bit of soy and a slight kick from jalapeno and ginger, help to bring out the salmon’s natural flavors. The salmon is best served with a fragrant steamed jasmine rice and a simple vegetable dish. The jus from the salmon should be savored and drizzled over steamed rice.

Ingredients:
1 salmon fillet
1 jalapeno- seeded and julienned
1 scallion- julienned, set aside some for garnish
1 tsp minced ginger
½ cup somen tsuyu
2 tbsp light soy sauce
1 tsp oyster sauce
¼ tbsp paprika
1 tsp salt

Directions:
  1. In a small bowl, combine somen base, soy sauce, and oyster sauce.
  2. Place salmon on a "boat" of aluminum foil, with sides inverted up. Rub salt on both sides of salmon.
  3. Pour sauce mixture evenly over salmon. Sprinkle paprika, jalapeno, ginger, and scallion evenly over salmon. Marinate for approx 30-45min.
  4. Bake at 375 degrees for approximately 20min (depending on thickness of filet).
  5. Drizzle a bit of the jus on top of salmon before serving. Garnish with a small bit of scallions.
