Sesame Soy Dressing





~No. 4 of my four sisters-in-law disclosed this little gem to me many years ago. I have used this dressing from pasta salads to plain garden salads. My family's favorite variation is still the most simple; see the serving suggestion on the bottom. Both my kids have loved it this way since they were 2yrs old and still do.


Ingredients:
¼ cup sugar
1 ½ tbsp seasoned rice vinegar or cider vinegar
½ cup mayonnaise
2 ½ tbsp light soy sauce
2 tbsp sesame oil
1 tbsp sesame seeds
½ tbsp fresh ground pepper
½ tbsp grated ginger (optional variation)



Directions:
  1. Mix first three ingredients thoroughly until it resembles a fine paste. Mixing the vinegar in initially will help the sugar dissolve faster.
  2. Mix in rest of ingredients.
  3. Store in refrigerator with a tight lid. Should keep well for 2-3 weeks. If the soy begins to separate; just stir and mix (or shake) again before use.
Serving suggestion: Drizzle lightly over raw broccoli florets. Toss thoroughly and set aside for 5min. The vinegar in dressing will help “cook” the broccoli a little bit. Toss again before serving. Garnish with chopped nuts and/or raisins.
