Herb Vinaigrette

~This vinaigrette is a riff from Bouchon, which also encourages the individual cook to use any variety of aromatic herbs. Experiment and find your favorite.










Ingredients:
2 tbsp Grey Poupon
1 tbsp white wine vinegar
juice from ½ a lemon
2 ½ tbsp sugar
1 tbsp fresh ground pepper
¾ cup extra virgin olive oil
1 small scallion
3 tbsp cilantro
3 tbsp fennel fronds
6 basil leaves

Directions:
  1. Finely mince herbs together. Combine all ingredients in a medium bowl and whisk thoroughly. Taste and adjust if necessary. 
  2. Store in refrigerator for up to 3 weeks.
