Three Cheese Sausage Muffins

~ These are savory muffins which are the perfect kid snack, breakfast, or lunch.  The main part is the batter. Once you complete the batter, you can make it using just about anything you have in the refrigerator.  A popular version is pepperoni and Parmesan. One of my son’s favorite combinations, is broccoli and sharp cheddar. A close friend preferred honey ham and cheddar and mozzarella. If you choose to omit cheese, you will need to add extra seasonings and salt. I prefer a strongly flavored cheese with a few mild cheeses to help keep the muffins moist. This recipe will yield 12 muffins. I keep extras in the refrigerator for a quick breakfast to go for my little ones. Approximately 20 seconds in the microwave is all you need.



Special Equipment:
    2 muffin tins
    4 ¾“ baking cups










Ingredients:
    ½ cup shredded sharp cheddar
    1/3 cup shredded medium cheddar
    2 tbsp freshly grated parmesan
    12 li’l smokies sausages

Batter:

    ¾ cup all purpose flour
    ¾ cup whole milk
    ¾ tsp baking powder
    1 egg

Directions:
  1. Preheat oven to 375 degrees.
  2. In a medium bowl, combine dry ingredients for batter and mix thoroughly.
  3. Add milk and egg and whisk until batter is smooth.
  4. Mix cheeses into batter.
  5. Place baking cups into muffin tin.  
  6. Pour batter into muffin tin and portion out for 12 muffins.
  7. For each sausage, cut into four pieces and place into a each muffin cup.
  8. Bake for approximately 20min.
  9. Remove and cool for 5min.
