Creamy Polenta

~Polenta is grits’ more elegant Italian cousin. Both are in the corn meal family and are nearly identical in texture and flavor. I like polenta’s vibrant color so will opt for this cousin depending on what I plan to serve it with.










Ingredients:
2 cups water
1 cup heavy cream
1 cup polenta
pinch of kosher salt

Directions:
  1. Combine water and cream in medium sized pot. Set on medium heat.
  2. Once liquid comes to boil, add polenta. Let cook for 2-3min. Once you see clumps start to form, then begin stirring.
  3. Once polenta comes to an almost oatmeal-like consistency, turn off heat. Stir in a pinch of salt to taste.
  4. Serve immediately.
