Tropical Fruit Vinaigrette

~Although I have only spent a short amount of time in her kitchen, my No. 3 sister-in-law has provided me with numerous recipes, which quickly became staples in my household. This dressing is completely nonfat, but more importantly- incredibly tasty. It is best served over a simple salad.
 










Special Equipment:
blender
sterilized jar

Ingredients:
3 kiwi- peeled and quartered
1 medium onion- peeled and quartered
1 Fuji apple- peeled, cored, and quartered
8oz can pineapple in juice- reserve juice
¼ cup seasoned rice vinegar
5 tbsp sugar

Directions:
  1. Combine half of portion of all fruit and onion into blender. Use puree option and slowly add sugar, vinegar, and pineapple juice.
  2. Slowly add rest of fruit and carefully nudge rest of fruit and onion down to puree completely.
  3. Keep refrigerated in a tightly sealed sterilized jar for up to 2 weeks. If dressing separates, shake well.
