Pico de Gallo

~'Pico' as my friends call it, is essentially ceviche without the seafood. Simple with bright flavors, it is a fantastic condiment to have on hand for a quick snack with tortilla chips for the kids (omit jalapeno, of course), or topping for taco night.  











Ingredients:
3 vine ripe tomato
½ cucumber
½ bell pepper
1 small red onion
1 jalapeno pepper
2/3 cup roughly chopped cilantro leaves
2 limes
salt
fresh ground pepper

Directions:
  1. Seed and dice tomatoes. Peel, seed, and dice cucumber. Finely dice onion. Remove seeds and membrane from bell pepper, then dice. Removed seeds and membrane from jalapeno, then mince. Combine together in a large bowl. Add cilantro and toss. Set aside.
  2. Juice both limes and add to large bowl. Lightly season with salt and fresh ground pepper. Toss thoroughly. Add more salt according to taste. Set aside for 5-10min. 
  3. Serve with tortilla chips or use as condiment.
