Slow-Roasted Garlic Salted Peanuts

~Most young children are naturally intrigued by the mystery of kitchen activities. Having them shell peanuts not only encourages involvement, but also helps them to practice fine motor skills. And the reward is a crunchy, savory snack that they know they helped prepare. 











Ingredients:
2lb raw peanuts in shell
2 ½ tbsp coarse salt
1 bulb garlic, finely chopped

Directions:
  1. Shell peanuts, soak in water for 30min.
  2. Drain peanuts and place in medium bowl.
  3. Toss in garlic and 1 ½ tbsp salt thoroughly.
  4. Cover bowl and marinate for 2hrs
  5. Preheat oven 220 degrees, add remaining salt to peanuts, and spread peanuts evenly on full sheet pan.
  6. Bake for 3-4hrs, shaking pan to turn peanuts occasionally.
  7. Taste occasionally for crunchiness and flavor. Add more salt and more time if necessary.
  8. Cool completely before storing in a tightly lidded sterilized jar.
